Mmm who doesn’t love loaded baked potatoes?? Well my family sure doesn but I wanted a lighter way to enjoy them so I threw this together and it was a huge hit! 🙂

Loaded Baked Potato Soup

  • 6-8 medium Red potatoes
  • 2Tbsp. butter or margarine
  • 1/4 cup diced red onion
  • 1 small Serano pepper
  • 2-32oz. cartons of Chicken stock
  • 3-4 cloves of garlic finely chopped
  • 1cup greek yogurt (plain) (I used Chobani)
  • 1 cup cheddar cheese shredded
  • salt and pepper to taste
  • 3 tsp.garlic & herb seasoning (such as McCormick’s packets)
  • 2cups frozen broccoli



  • turkey bacon crumbled
  • shredded cheese
  • Louisiana Hot sauce
  • sliced green onions
  • I added some grilled chicken too!


  1. In a large pot on medium high heat, melt the butter
  2. Add the garlic and serano pepper
  3. Add small cubed potatoes and red onion season with salt, pepper, and garlic herb seasoning and let brown
  4. Once browned slowly add the Chicken stock and make sure to scrap the bottom to get all the yummy bits! 🙂
  5. Let boil for 25minutes on medium
  6. In a small bowl mix the yogurt and the cheese
  7. slowly add ladle fulls of the soup to the mixture and stir till cheese is melted.
  8. Stir the cheese/yogurt mix to the soup
  9. Let simmer for another 15minutes
  10. Serve in a bowl and top with your favorite toppings! 🙂
