So one of my favorite things is sweet and spicy mixed together in an explosion of flavor! Well if you like the same thing this salsa is for you!! 🙂 I love it just with some tostito scoops or later I will post my recipe for herb roasted Chicken topped with this yummy salsa! So delicious! 🙂

Spicy Mango Salsa

  • 2 rip mango
  • 1/2 cup jicama*
  • 1/4 cup red onion
  • 1 medium Serrano pepper
  • 1/2 cup baby bell peppers (orange, yellow &red)
  • 2 limes
  • 1/2 Tbsp. honey
  • 1/2 Tbsp. apple cider vinegar

Chop the mango, jicama ,onion, Serrano, and baby bells into very small cubes, place into a medium bowl. I leave the seeds in the serrano when i chop it but you could definitely remove them to lower the heat factor! Also for less heat you could substitute a jalapeno instead.  Roll the limes along the counter firmly to get the juices flowing and then slice in half. Squeeze the juice of the 2limes in the bowl over the mango and peppers. Then add the honey and vinegar. Stir until well mixed. Let set in the refrigerator for atleast 30minute to let flavors blend (you could certainly eat immediately, I have 🙂 , but the flavor grows so much when you let it set for a little bit)…then ENJOY!!! 🙂

*Jicama is a Mexican turnip. It has a similar texture to a pear mixed with a potato! I found my jicama in the produce cooler section at my grocery store. When all else fails just ask someone for help finding it ! 🙂 The flavor is very mild but it adds a great crunch factor! Im sure if you can not find this you could enjoy this salsa just as much with out it! 🙂

this is what the Jicama looks like before you peel it! This is what mine looked like when I bought it. You only need a small one

Let me know what you think! I hope you enjoy this as much as my family and I do! 🙂

Happy Cooking!
Beth 🙂
