I have been searching and searching for a recipe that would equal up to or blow out of the water, my favorite Spinach artichoke dip from Sboros restaurant here in our town. My hubby and I go there for our anniversary almost every year and we ALWAYS order their dip, simply bc it is THE BEST!!! After trying several recipes and having non of them even come close to Sboro’s (eventhough there were yummy), I decided to see what I could come up with! 🙂 Here is it is! My husband says that it is actually better then Sboros but I would love to here what you think! 🙂

Baked Spinach Artichoke Dip

  • 2boxes frozen chopped Spinach (thawed)
  • 2-12oz.jars Marinaded Artichoke hearts, drained & chopped
  • 1cup light Mayo
  • 8oz. Philadelphia Cream Cheese (1/3 less fat)
  • 1 1/4cup Chobani plain Greek Yogurt
  • 4-5 cloves of pressed garlic
  • 1/4tsp. red pepper flakes
  • 1 1/4 cup + 1/4cup freshly grated Parmigiano Reggiano
  • 1/4-1/2cup Mozzarella cheese
  • 3-4 slices bacon cooked and chopped
  • 1/2tsp. onion powder
  • french baguette, sliced

Preheat oven to 375F

place the thawed spinach in a strainer, let set

In large mixing bowl, combine room temp cream cheese, greek yogurt and mayo till smooth

add in the garlic, red pepper flakes,onion powder, and Parm. Reg. cheese

Place the drained spinach in several paper towel and squeeze until all or most the water drains out

Add spinach and artichokes into the cheese mixture

spread dip into a greased baking pan (I used a 9×13)

Top the dip with Mozzarella cheese, extra 1/4cup Parm Reg. cheese and bacon

Bake about 20-25min. or until bubbly and edges start to brown

Serve hot!

Scoop onto slices of baguette and Enjoy!! 🙂
