So here is the deal, My mom has been trying to make me gag down zucchini for as long as I can remember! I have never been a fan! We’ve had a garden the last few years, and  I have tried over and over to force myself to love this green veggie, that grows abundantly. But my taste buds scream in protest every time, until…I made these yummy little boats!!! I am hooked!! I find my mouth watering for these right now as I type this haha 🙂 So if you are a Zucchini hater I challenge you to try this and see if your mind is changed like mine was. 🙂


Stuffed Zucchini Boats

  • 4small-medium Zucchini
  • 3gloves of garlic chopped
  • 4baby sweet red pepper diced
  • 1/2 small red onion diced
  • fresh ground pepper & salt to taste
  • 3Tbsp. of McCormicks Tomato Basil Garlic seasoning
  • 1Tbsp. extra virgin olive oil
  • 1Tbsp butter
  • 1can diced stewed tomatoes
  • 2cups Spaghetti sauce of your choice ( I used Hunts 4Cheese sauce)
  • 1.5lbs. ground Turkey burger
  • 1/2cup ish Mozzarella cheese
  • 1/4cup fresh grated Parmesan cheese
  • 2tsp. red pepper flakes (optional)
  • fresh baby spinach (ripped into small pieces)

Preheat oven to 375F

In a saute pan, heat Oil and butter

when totally melted add garlic, onions, red pepper flakes and peppers

while they are cooking, slice the zucchini length wise and scoop out the inner section, set aside

Once the pepper mix is cooked down and starting to caramelize, add in the turkey burger and seasoning, let cook till starts to slightly brown, add in the tomatoes and spinach, mix together till the spinach begins to wilt, remove from heat

in a pan (size depends on how big your zucchinis are) scoop several spoonfuls of spaghetti sauce onto the bottom of the pan. Spread around to cover the bottom.

Place the zucchini, sliced side up, in the pan

fill each zucchini with the meat mixture, I made the heaping full 🙂

top spaghetti sauce with the mozzeralla and then the fresh parmesan cheese, salt and pepper to taste

Place in the oven for about 25minutes or until zucchini is fork tender and the cheese begins to brown on top
