These cupcakes are one of the BEST Pumpkin cupcakes I have ever tasted!! I am not sure where my friends found the recipe but it is too good to not pass on! :)*

Pumpkin Cream Cupcakes

(makes 24 cupcakes)

  • 1 Spice Cake mix
  • 1pkg. (3.4oz) JELLO vanilla instant pudding
  • 1 cup canned pumpkin puree
  • 1pkg. (8oz) Cream Cheese
  • 1/4 cup sugar
  • 1 egg

Preheat oven to 350F

Make cake according to directions, adding in the pumpkin and dry pudding mix.

Mix well

Fill lined cupcake pans with cake mix

in medium bowl mix together room temp cream cheese, egg and sugar

Spoon over top of cake mix on each cupcake

Bake 20-24minutes or until toothpick comes out clean

Pumpkin-Caramel filling

(makes filling for 24cupcakes)

 

  • 6oz. Pumpkin butter
  • 3oz. caramel

Mix together the caramel and pumpkin butter, then fill the center of each cupcake

Cream Cheese Icing

  • 2 (8oz) Cream Cheese
  • 2tsp. vanilla extract
  • 2tsp. cinnamon
  • 3cups Confectionery Sugar

Cream the cream cheese until smooth

Add the Vanilla, Cinnamon and Confectionery sugar, beat until smooth and well mixed (keep refrigerated till you frost the cupcakes)

Drizzle top with your favorite Caramel and ENJOY~ 🙂
