Scalloped Potatoes and Ham

 cooked diced Ham (about 3cups)

8 peeled and diced potatoes

salt and pepper

all purpose flour

1cup milk

onion powder

cayenne pepper

1 stick butter (diced)

So I had leftover Ham from Easter dinner that my kids insisted on bringing home from Nani’s bc “they were going to eat it!” haha yeah that didnt happen. So what better way to use up the ham then this recipe!?! This has been a favorite of mine since I was a little girl! My mom used to make this and it would be the highlight of my week! Well it still is! The leftovers are even better! 🙂 This is my take on her recipe! So here we go…


Preheat oven to 400degrees F

-Using a Mandolin I slice the peeled potatoes into thin slices (about 1/8in) Set aside in a bowl of water so they dont brown

-then I diced up the Ham. In the past if I didnt have left over ham to use up, I have used thick slices of good deli ham or just bought some of the thick sliced ham you can buy in the meat department. 🙂 All work equally good 🙂

-spray non stick cooking spray in a 13×9 pan

-begin the layering 🙂

-layer the potatoes slightly overlapping to cover the bottom of the pan

-sprinkle the potatoes w salt and pepper (I did 2 cracks of salt and 3 cracks of pepper on my grinders) and then the onion powder (about 2tsp.)

-sprinkle on the ham about 1/2cup, try and spread it evenly

-top with a sprinkle of flour (about 1 1/2tsp)

-continue layering until all ingredients are used or until the top of the pan is reached 🙂 on the first layer the middle layer and the top add 3Tbsp. butter diced up.

-final layer should be ham 🙂 on the top layer I like to sprinkle a little cayenne pepper! I never measure this…it really is a taste thing! If you like heat sprinkle away! If not just omit! 🙂

-pour in the milk

-Place pan in the oven

-Bake for about 45min to an hour or until knife can easily go through the potatoes!

I hope you enjoy this as much my family and I do…actually they enjoyed it so much next time I am going to have to make 2 pans bc the 13×9 pan I made tonight is completely scrapped clean! haha
