Cajun BBQ Pork

  • 3-4lbs boneless pork loin
  • 2-3links of smoky sausage (sliced)
  • 2-3links turkey sausage (sliced)
  • 5-6 slices of uncooked bacon (diced)
  • 1/2cup apple cider vinager
  • 1/3cup ketchup
  • 1/4cup spicy mustard
  • 2Tbsp.molasses
  • 2Tbsp. + 2Tbsp. packed brown sugar
  • 1tsp. + 1/2tsp. Cajun seasoning
  • 2tsp. paprika
  • 2 cranks of fresh cracked black pepper
  • 2 cranks of sea salt

992989_10151697492172888_1105667802_n *For this recipe I used my Pampered Chef baker stone, but you could use a dutch oven, a slow cooker, or a baking pan covered in foil.

Preheat oven to 300F

In the bottom of baking dish combine the vinegar, ketchup, mustard, molasses, 2Tbsp brown sugar and 1tsp. Cajun seasoning.

In a small bowl combine the remaining 2Tbsp. brown sugar, Paprika, remaining Cajun seasoning, and salt and pepper.

Rub the dry ingredients all over the pork loin.

Add the pork to the liquid in baking pan.

Add sliced sausages and bacon.

Cover and let bake for 2hrs.

After 2hrs. Take knife and fork and start to pull apart the meat. Spoon sauce over the meat.

Raise oven temp to 350F Cook for another hour and a half or until meat is tender and brown on edges.

Serve over brown rice and ENJOY!!!

My family went absolutely crazy for this!! My 8yr old son said “Mommy can we please have this every night!?” haha Let me know what your family thinks! 🙂

**After having this for lunch today, I am thinking that next time I would definitely add a diced up Serrano pepper or Jalapeno for a kick of heat. 🙂
