Okay so this is less of a recipe and more of an idea!

My kids (ages 11,9,8,6,4,and 6weeks) are all good eaters, but when it comes to veggies, they all have their picky moments. This is especially true with anything green πŸ˜‰ I have tried and tried to get them to eat salad and have been less then successful. The other night at dinner, my hubby and I were making salads and I offered some to the kids and received the usual response “ewww”, “I dont like salad”. Well a light bulb went off and I remembered back when I had tried the no carb thing. I used lettuce as a wrap for my turkey burgers…this turned into (some how haha) lets make lettuce a wrap for the stuff they do like in salad! πŸ™‚ And “lettuce boats” were born. I showed the kids how to stuff their favorite ingredients inside the leaf of Romaine and make a boat! They loved the idea of being able to build their own and loved that they got to “play” with their food a little too! hehe πŸ™‚ Here’s hoping that this mom trick works for your kids as well, whether they are big or small, or you are the kid at heart! Lettuce Boats

  • Romaine Hearts (rinsed and pulled apart into separate leaves)
  • shredded cheese
  • crumbled bacon
  • crumbled croutons
  • diced tomatoes
  • diced cucumbers
  • diced green onions
  • diced hard boiled eggs
  • anyΒ  toppings you like on your salad
  • your favorite salad dressing

Take one lettuce leaf and fill with all your favorite salad toppings. Drizzle with salad dressing. Slightly wrap up and ENJOY!! πŸ˜€ 1011365_10151690623102888_1352859069_n
