My son is a HUGE lover of shrimp, but being that it can be kind of pricey, we do not have it often. Well we found it on sale this last week so I had to grab some. This is what I came up with for dinner 🙂

Garlic Parmesan Shrimp

  • 3 cups of med cooked shrimp
  • 4Tbsp. Butter
  • 1Tbsp. EVOO
  • 1 large clove of garlic pressed
  • 1Tbsp red pepper flakes
  • 1cup of fresh grated parm cheese
  • 1/2 cup parm cheese
  • 1/4 cup greek yogurt
  • 1/2cup milk

In a medium sauce pan melt the butter and EVOO together on medium heat.

Once melted add the pressed garlic and red pepper flakes.

When the garlic is translucent lower the heat to a simmer and slowly add the milk.

Whisk continually and add the Greek yogurt.

Once all combined, add the fresh and already grated Parmesan cheese. Combine completely.

Once sauce comes together, add the shrimp to a large skillet and heat through.

When shrimp is warmed through and starting to brown, Pour the sauce over the shrimp and let sauce slightly thicken.

Stir repeatedly.

Serve over warm angel hair pasta, top with more fresh Parmesan and Enjoy! 🙂 993909_10151700043212888_543509444_n
