This meal is so simple, so quick and easy to make. It has become a hot summer day favorite in our house! 🙂 For my kids who don’t love lettuce, they simply add their meat to their rice and enjoy it that way! Either was the flavor is amazing! 🙂

Turkey Lettuce Wraps

  • 1 1/2 pound of ground turkey
  • 1 diced Serrano pepper
  • a few good cranks of fresh cracked pepper and sea salt
  • 1 small red or orange bell pepper, diced
  • 2 inch piece of fresh ginger, grated
  • the juice of a small lime
  • the zest of above lime
  • 1 tsp. chili powder
  • 1/2tsp red pepper flakes
  • 1/4 cup of slivered almonds
  • several leaves of romaine lettuce hearts
  • extra lime for garnish
  • 2 cloves of garlic pressed
  • 6Tbsp. of teriyaki sauce
  • 2Tbsp. EVOO
  • 2tsp. onion powderIMAG2744

In a large skillet, add the the EVOO , garlic, ginger, Serrano pepper,lime zest, red pepper flakes and bell peppers. Let them simmer on medium heat, till the garlic becomes translucent.

Add the turkey burger to the skillet and mix well. Let the burger cook almost completely.

Add the chili powder, onion powder, salt and pepper, and Teriyaki sauce.

Once the turkey starts to slightly get golden brown add the almonds and the lime juice. Let simmer for 1-2 minutes.

Fill the lettuce leaves with the meat mixture.

Garnish with another squeeze of lime juice.

Serve with brown or white rice ( I added a sprinkle of fresh cilantro and lime juice to my rice)

Wrap up the lettuce around the meat and ENJOY!!! 😉

*My kids added their rice to the lettuce leaf too before eating 🙂
