My family and I decided to grow a garden this year, which has been a lot of fun! Even though we only planted one yellow squash plant, we have been overwhelmed with how much squash that one plant has provided! I have been trying anything and everything to get them all used up, all while trying to make it as yummy as possible!

My girls and I are definitely squash lovers, but the boys in our house are all less then thrilled. They specifically hate when its “mushy”. Keeping this in mind I decided to try a raw yellow squash slaw. We put this super yummy slaw inside our Chicken wraps and it was out of this world!!

Here is what I came up with:yellowsquashslaw

Raw Yellow Squash Slaw

  • 1 medium yellow squash
  • 1 large ripe mango
  • 1 ripe avocado
  • 1 small Serrano pepper*
  • the juice of one lime
  • 2tsp. chopped cilantro

Using a julienne slicer , slice the around the outside of the squash until you start to see the seeds.

Place the julienne squash in a medium bowl.

Peel and dice (small cube) the mango and the avocado.

Add them to the squash.

Finely chop the Serrano pepper and cilantro and add them to the bowl as well.

Last squeeze the juice of the lime into the bowl and stir till well combined!

Let set in fridge for about 15minutes to allow all the flavors to marry! 🙂
