I decided on making cheeseburger soup, but then I had to revamp it because my son doesn’t like cheese (I know…CRAZY!! haha) So I guess this is actually hamburger stew, but once you add the cheese on top it tastes exactly like a cheeseburger!! πŸ™‚

My kids have decided that this stew has to be added to our monthly meal plans!

The look on their faces when they first heard me say I was making “Cheeseburger stew” was, well…less then excited! haha My son Kaiden was the first one to take a bite and his response was so funny! He said “wow!! I feel like I just ate a burger in liquid!!” haha Then one by one they all bravely took a bite and one by one they all bugged their eyes out in delight at how much it tasted like a cheeseburger! πŸ™‚ I cant wait for you to all try this! πŸ™‚

Here is the recipe:

Cheeseburger Stew

  • 1.5lb. ground beef
  • 1/4cup diced onion
  • 1 jalapeno, diced and seeded (optional)
  • 2 pressed cloves of garlic
  • 2Tbsp butter, salted
  • 4-5 white potatoes, diced
  • 5oz can of tomato paste
  • 1cup milk
  • 4Tbsp flour
  • 1/3 cup ketchup
  • 2Tbsp. mustard
  • 12beef bouillon cubes
  • 12ups of hot water
  • 3cranks of sea salt
  • 3cranks of fresh cracked pepper

Toppings:

  • ketchup
  • mustard
  • dill pickles, diced
  • hamburger rolls for dipping
  • Cheddar cheeseΒ  cheeseburgerstew
  1. In a large stock pot add butter and let melt down over medium-high heat
  2. Add the diced jalapenos, onions and pressed garlic to the melted butter
  3. Once the garlic and onion start to soften, add the burger
  4. Cook burger until starts to caramelize
  5. When the burger is starting to brown add the flour and stir in
  6. Add the water and bouillon cubes ad bring to a boil (Make sure you scrap the bottom of the pan when you add the water. You want to make sure you add all those bit of caramelized yumminess! )
  7. once almost at a boil add the cubed potatoes.
  8. Let boil for 10minutes
  9. Add the mustard, ketchup, milk and tomato paste (I added a few ladles full of broth to a bowl and whisked in the all the ingredients in that, It was easier to combine that way)
  10. Continue boiling for another 10-15 minutes or until potatoes are cooked through (can be cut in half w the back of a butter knife)
  11. You can serve immediately or let simmer on low until ready to eat!
  12. Pour into a soup bowl
  13. Top with a handful of cheese, a swirl of ketchup, a few drops of mustard, and a couple spoons of the diced pickles
  14. Dip roll in the broth
