‘Tis the time of year for all things pumpkin!! YEAH!! ๐Ÿ™‚ My favorite time of the year, and I do LOVE me some pumpkin!! ๐Ÿ™‚ I combined several pumpkin recipes to come up with this perfect one! These cookies are seriously sooo yummy! They are super moist and bursting flavor all with out being too over the top sweet!

Here is the magic recipe ๐Ÿ˜‰ :

Pumpkin Butterscotch with Icing

  • makes about 60 cookies
  • 2cups butter (room temp)
  • 2cups sugar
  • 1-15oz can of 100% pumpkin puree
  • 2tsp. vanilla
  • 2tsp. baking powder
  • 2tsp. baking soda
  • 4cups flour
  • 1tsp cinnamon
  • 1tsp nutmeg
  • 1/2 tsp pumpkin pie spice
  • 2eggs
  • 1/4tsp. salt
  • 1cup cinnamon chips
  • 1.5cups butterscotchย  chips

Icing

  • 3cups confectionery sugar
  • 3Tbsp. water
  • 1/2 tsp. pumpkin pie spiceglazedpumpkinbutterscotchcookies
  1. Preheat oven 350F
  2. In large bowl cream the butter and sugar together until soft and fluffy.
  3. add the baking soda, baking powder and salt
  4. add the vanilla and pumpkin
  5. make sure to scrap sides of bowl to get all ingredients well combined
  6. add the flour and mix until well combined
  7. Stir in the chips
  8. Using cookie scoop, place them on a cookie stone and bake for 11minutes
  9. Let cool on a cooling rack
  10. In a small bowl mix together the conf. sugar , water and pumpkin spice
  11. drizzle glaze over top of cooled cookies
  12. let set for 5 minutes
  13. ENOY!!! ๐Ÿ™‚

***I split my batter into half and did half with the cinnamon and butterscotch chips and the other with butterscotch and dark chocolate chips. So yummy! ๐Ÿ™‚
